The best keto bread ever!
This bread recipe was inspired by Diedre's Kitchen recipe. you can find her on youtube under that name so please check out her channel!
When I first started the Ketogenic Diet at the end of December 2018, I knew I would have to give up bread and at the time I didn't think it would be all that hard. I didn't eat much bread anyway... or at least that's what I thought. Turns out, I really started to miss bread. Sometimes I would be in the mood for a sandwich, maybe some French toast, or a really juicy burger. However, I couldn't have any of those things because bread was a Keto no-no. Thus, began my search to find a bread substitute.
Just simply typed in keto bread substitute in Youtube's search engine and Bingo!
Finding some was much easier than I thought. I found a whole slew of keto bread videos. You have no idea how happy I was. Now, I had never baked a loaf of bread before so, I was looking for the easiest recipe I could find.
Trial, Disgust, and Error
Let me just say that there are a lot of Keto bread recipes out there. You've got: cloud bread, 90 second mug bread, almond flour bread, collagen bread and the list goes on and on. I tried several of these recipes. While they weren't horrible (when the recipe turned out right) they just weren't that good to me either. They were all missing the essence of what makes bread--BREAD! The soft pillowy texture. The yummy smell of yeast. And yes, these were suitable substitutes, they just weren't what I was looking for.

Finding a needle in a hay stack
My search continued and for weeks I was hoping to find something that would get me close to the distinct taste of good bread that was beginning to become more elusive to me on the Keto Diet. During this time I had just gotten a Kitchen Aid stand mixer a few months earlier for Christmas. Having not used it yet, I was hoping to find a bread recipe that I could convert to Keto and whip it up in my stand mixer. I went to Youtube, typed in: stand mixer bread recipes.
The result were plenty. I watched a few videos but seeing as I was still new to Keto cooking trying to convert a recipe was proving challenging. So then I thought, "let me narrow down my search." Back at Youtube's search engine, I type: stand mixer low carb bread recipes. There was Ms. Diedre! First video. I was so excited after watching her video. All the ingredients I needed were already in my kitchen. I really wanted a hamburger so instead of a loaf of bread, I made burger bun!

These were fantastic! Just what I needed and had been looking for. By combining key ingredients such as Oat Fiber, Flaxseed Meal, and Vital Wheat Gluten, along with some yeast, Ms. Diedre had came up with best Low Carb bread solution in my opinion.
Finally, Success!
For a while this was my go to recipe when I wanted bread. But what I would soon find out is, I don't really care for the taste of flaxseed. It has a strong, distinctive taste that is kind of overpowering. I began to think about what I could replace the flaxseed meal with. So in September of 2019 I went on Amazon looking for low carb flour, hoping to find something that would give the bread a milder taste and also work well for sweeter breads, like French toast and whatnot. At first, it was looking kind of bleak. Everything had way too many carbs. But then, I came across Lupin Flour.

I read the nutrition facts: Fat 2g, Carbs 12g, Dietary Fiber 11g, Sugar 1g, Protein 12g. Everything looked good but I was suspicious. Here was this miracle flour and yet, I hadn't heard of anyone using it. What was wrong? I did some research and I found only a few references to lupin flour in Keto cooking. How was this possible that next to no one was using this extremely low carb flour? I decided to give it a chance. The first thing I used it for was the bread recipe. You guys, It came out so amazing! The whole time it was cooking, it smelled like white bread in my kitchen. Some adjustments had to be made to the cooking time but other than that it was the perfect replacement. And the taste?
