Turnip & Bacon Hash Bowl

360g Turnip, cubed
1/4 cup (40g) Yellow Onion, diced
1/5 cup (20g) Scallions
1/4 cup (28g) Shredded Cheese
1 tbsp (15g) Butter
4 strips Bacon
2 Eggs
Salt
Pepper
Red Pepper Flakes

Begin by dicing the Turnip(s) into 1/2 inch cubes and cut the onion in the same fashion, then set aside.


In a large skillet, fry the bacon. When done, transfer to a plate lined with paper towels. Using the same skillet and the bacon grease, sauté the onions and turnips for 5 minutes on medium-high heat. Season with salt, pepper, red pepper flakes, and any other seasoning you may like. Reduce heat to medium and cover, cook for 10-12 minutes until tender, making sure to stir the mixture every 3 minutes.


Once it’s done, divided the hash evenly into 2 bowls, then top with cheese and scallions. In the same skillet, add butter and cook 2 eggs over easy. Lay 1 egg on top of each bowl and enjoy!
